This pudding is a lot like the old-fashioned rice pudding you know. It is cooked the same way, by simmering rice in milk seasoned with warm, aromatic spices and sweetener until it thickens a bit.
Rice porridge Combine rice, milk, sugar, split vanilla bean and salt in a large saucepan. Bring mixture to a gentle boil. Bring mixture to a simmer and stir occasionally, for about 30 to 40 minutes.
To make these crispy grains, combine cooked rice (or microwavable rice, like Trang of @trangskitchentable) with your favorite seasonings and — most importantly — oil.
Cover the pudding and chill until cold, at least 2 hours. The pudding will thicken as it chills. To serve, discard the cinnamon stick and divide the rice pudding among 4 bowls.
