The Pi can sink up to 16mA per pin if configured properly. Try that and see what happens. I normally order a few of each sensor so I can try with a different sensor if something is acting up, though.

Update: ‌HomePod‌ software version 16.3 enables the temperature and humidity sensor in the ‌HomePod mini‌, according to Apple's release notes.
