Ripeness is the major difference between red, orange, yellow and green bell peppers. Green bell peppers are more bitter because they’re less ripe than their sweeter, red counterparts.

But the yellow fly is still a constant companion in those patches of the panhandle we like to call old Florida. Where shacks sit on the water, where ceilings fans keep the heat at bay.
