I brought the recipe for these gougeres back from a trip to Nice, France. The original called for Gruyere cheese, but I found that Gouda is a more budget-friendly alternative.

Assemble dish: Place pasta in greased casserole dish. Pour cheese sauce over it and mix. Sprinkle with bread crumbs, top with ham. Bake: Bake about 30 minutes, or until crumbs are a golden brown.

Cook pasta as directed on package; drain, reserving cooking water. Pour pasta into an 8" baking pan coated with cooking spray; set aside. Fill a bowl with ice water. In a pot, boil cooking water.
