Semolina flour is made from durum wheat and has higher starch levels that are released when it's cooked in hot oil, resulting in crispy onion rings.
Stir in flour and cook, stirring, for 1 to 2 minutes to cook out floury taste. Add stock a little at a time until well combined and bring to boil. Simmer 2 minutes to thicken and taste for seasoning.
Mix the eggs, flour, oil and salt in the bowl of a stand mixer with your hands until a shaggy dough forms. Knead with a dough hook for about 10 minutes, until the dough is smooth and elastic.
Here's what you'll need: 3 large onions , 1 cup rice flour (plus about 1/2 cup more), 1 teaspoon baking powder, 1 teaspoon garlic powder, 1 egg, 3/4 cup water and oil for frying.
Knead the dough in another bowl using wheat flour, oil and water. Let it rest for 10-15 minutes. Now, chop onion, green chili, and some fresh coriander leaves.
