Pour the whisked eggs over the pancake mix, and sprinkle the cheese and bacon over the top. Bake at 375°F for 20-25 minutes, or until puffed in the center and browned.
I’m adding bacon to mine, so, a BECK for breakfast and maybe some smoked almonds for lunch. I’ll downshift into swordfish piccata for dinner and call it a weekend.
